Our approach is a fusion of our expertise: Alex’s culinary skills blend with Francesca’s knowledge of herbs to create unique sensory journeys. We live in a world of blooming meadows, wild herbs, berries, roots, and leaves—the mountains are a rich natural botanical garden. A world to protect, as well as to enhance and share.

Our deep and constantly meticulous knowledge of processing and cooking techniques allows us to create a zero-waste cuisine with our top-quality ingredients: the whole product arrives intact in our kitchen and is used in its entirety, reducing food waste while reviving forgotten preparations and new flavors.

Our cuisine starts from a clear idea: to enhance what the territory offers naturally and sustainably. The wild herbs of Valsassina, harvested with full respect for nature, become the distinctive element of a gastronomic offering rooted in local tradition but looking forward with curiosity and technique.

Each dish is born from listening to the seasons. Ingredients change, alternate, and combine in an essential way to make room for authentic flavors. Cooking is precise, preparations respectful—nothing forced or excessive. The cuisine is light, designed to be recognizable and accessible while maintaining a strong identity.
Our daily work in the kitchen results from study and collaboration, but also from concrete choices: reducing waste, using what is available, and seeking a balance between taste, seasonality, and sustainability.
